Step-by-Step Instructions
 

Preparing the Green Beans

  • Start with a 2-pound (900 g) bag of fresh green beans. Carefully trim the ends off each bean to ensure uniformity. Next, bring a large pot of salted water to a rolling boil and add the trimmed green beans. Blanch them for 3-5 minutes, just until they turn bright green and begin to soften. Drain the green beans immediately and run them under cold water to stop the cooking process—this will preserve their vibrant color and crisp texture.

Bacon Wrapping the Green Beans

  • Take one package of bacon and cut each strip in half to create shorter pieces. Each bundle should consist of about 5 green beans. Wrap one half strip of bacon tightly around the middle of the beans, securing them together. Arrange each bundle seam-side down on a baking sheet lined with parchment paper. This will help prevent the bacon from unwrapping during cooking and make cleanup easier.

Preparing the Sweet and Savory Glaze

  • In a small saucepan over medium heat, melt 1 stick (115 g) of butter. Once melted, stir in ½ cup (110 g) of brown sugar, 1 tablespoon (15 ml) of soy sauce, 2 minced garlic cloves, 1 teaspoon (5 g) of garlic salt, and ½ teaspoon (2 g) of black pepper. Stir until the sugar is dissolved, and everything is well combined, forming a rich, aromatic glaze. The combination of sweetness from the sugar and umami from the soy sauce will perfectly complement the smoky bacon.

Cooking the Bundles

  • Preheat your oven to 400°F (200°C). Use a spoon to drizzle or pour the prepared glaze evenly over the top of the bacon-wrapped green bean bundles. Make sure every bundle gets coated generously for maximum flavor. Place the baking sheet in the preheated oven and bake for 25 minutes, until the bacon is crispy and the green beans are tender.
  • After about 12-15 minutes, remove the baking sheet from the oven and carefully baste the bundles with the glaze that has pooled at the bottom of the pan. This extra step ensures that the bacon stays moist and infuses more of that delicious sweet-savory flavor into each bite. Return the bundles to the oven and continue baking until the bacon is perfectly crisp.
