Ingredients
  

  • 2.5 cup pre-cooked cornmeal Also known as masarepa or harina de maĆ­z precocida.
  • 1 teaspoon salt
  • 2 cup water Adjust as needed for dough consistency.
  • 500 gram shredded chicken breast
  • 2 ripe avocados Approximately 400 g.
  • 2 tablespoon mayonnaise Can substitute with yogurt for a lighter option.
  • 1 red onion Finely chopped, approximately 100 g.
  • 1 red chili Adjust quantity based on spice preference.
  • 30 gram coriander Also known as cilantro.
  • 2 limes Juiced, approximately 60 ml.
  • salt and pepper To taste.

Step-by-Step Instructions
 

  • To create the base of your arepas, mix 2.5 cups (~300 g) of pre-cooked cornmeal with 1 teaspoon of salt in a large bowl. Gradually add 2 cups (500 ml) of water while kneading the dough with your hands. Continue until the dough is smooth, pliable, and not sticky. Divide it into 8 equal portions and shape each into a round patty about 1/2 inch thick.
  • Heat a non-stick skillet over medium-low heat. Cook the arepas for approximately 5 minutes on each side, or until golden brown and slightly crisp. Once done, set them aside and keep them warm.
  • In a mixing bowl, combine 500 g (~1 lb) of shredded cooked chicken breast, 2 ripe avocados (mashed), 2 tablespoons of mayonnaise (~30 ml), 1 finely chopped red onion (~100 g), 1 minced red chili (~10 g), 30 g of freshly chopped coriander, and the juice of 2 limes (~60 ml). Season with salt and pepper to taste. Mix well until the ingredients are evenly combined and the filling is creamy.
  • Using a knife, carefully slice each arepa halfway to create a pocket. Spoon the chicken avocado filling generously into each pocket while the arepas are still warm. Serve immediately and enjoy the vibrant flavors.

Notes

Ensure the dough is not too sticky or dry by adjusting water. Use fresh ingredients for the best flavor.
