  • Place two cans of drained chickpeas (totaling about 850 grams), one third cup (80 ml) of fresh lemon juice, four tablespoons (60 ml) of high-quality tahini, four small garlic cloves, one and a half teaspoons of salt, and four to six ice cubes into a food processor. Blend continuously for about five minutes, ensuring a smooth, lush consistency that takes on a fluffy, almost velvety texture. The ice cubes play a key role here by aerating the mixture and imparting a lightness that enhances the final result. Taste and adjust seasoning as needed, ensuring a balanced blend of earthy chickpeas, tangy citrus, and nutty sesame notes.
