- 100 gram baby spinach Wilt and squeeze out excess water.
- 200 gram feta cheese Crumble before mixing.

Start by preparing 100g (3.5 oz) of fresh baby spinach. Place it in a colander and pour a full kettle of boiling water over the leaves to wilt them. Follow this by rinsing the spinach with cold water to stop the cooking process. Squeeze out as much excess water as possible using your hands, ensuring the spinach stays dry and prevents a soggy pastry base. Once dry, chop the spinach finely and place it in a mixing bowl.
Roll out pre-made puff pastry sheets on a lightly floured surface. Cut the pastry into squares or rectangles, depending on your preferred pie shape. Place a generous spoonful of the spinach and cheese mixture onto one half of each pastry piece, leaving a small border around the edges for sealing.
Preheat your oven to 375°F (190°C) or set your air fryer to a similar temperature. Arrange the pies on a baking tray lined with parchment paper or directly in the air fryer basket. Bake for 20 minutes or until the pastry is puffed and golden brown. Allow the pies to cool slightly before serving.
Brush egg wash evenly for a uniform golden color. Use sesame seeds or black cumin for added flavor.
