  • Basting Brush For applying pepper jelly glaze.

Ingredients

  • 12 ounce gorton's southern style shrimp Roughly 340 grams, substitute with any crispy shrimp if needed.
  • 8 ounce smoked sausage Roughly 225 grams, make sure it's gluten-free if necessary.
  • 2 medium bell peppers Use red and green for a festive look.
  • 1 medium onion Cut into 1-inch pieces for easy skewering.
  • 1 tablespoon olive oil For coating vegetables and sausage evenly.
  • 1-2 teaspoon cajun seasoning Adjust according to your spice preference.
  • ¼ cup pepper jelly Use for glazing, roughly 60 ml.

Step-by-Step Instructions

  • Start by gathering all your ingredients for easy assembly. You will need 12 ounces (340 g) of Gorton's Southern Style Shrimp, 8 ounces (225 g) of smoked sausage, 2 medium bell peppers (use red and green for a festive touch), and 1 medium onion. The bell peppers and onions should be cut into 1-inch pieces to make skewering easier. Additionally, have 1 tablespoon (15 ml) of olive oil, 1-2 teaspoons (5-10 g) of Cajun seasoning, and 1/4 cup (60 ml) of pepper jelly ready.
  • In a large mixing bowl, combine the chopped bell peppers, onion pieces, and smoked sausage slices. Drizzle 1 tablespoon (15 ml) of olive oil over the ingredients, and toss to coat evenly. Sprinkle in 1-2 teaspoons (5-10 g) of Cajun seasoning, depending on your preferred spice level. Make sure that all the vegetables and sausage are well-seasoned for maximum flavor.
  • Preheat your oven to 400°F (200°C). Arrange the seasoned veggies and sausage slices on a baking sheet in a single layer. Alongside them, place the Gorton's Southern Style Shrimp as per the package instructions. Bake everything together for approximately 15 minutes or until the shrimp are crispy and the vegetables are tender.
  • Once everything is cooked, it's time to assemble the skewers. Using wooden or metal skewers, start with a bell pepper piece, followed by an onion piece, then another bell pepper, a slice of smoked sausage, and finally a shrimp. Repeat until all ingredients are used. This combination creates a visually appealing skewer and ensures every bite has a mix of all the delicious elements.
  • For the finishing touch, warm 1/4 cup (60 ml) of pepper jelly in the microwave for about 15-20 seconds to make it easier to brush on. Using a basting brush, generously coat each skewer with the warm pepper jelly. This glaze adds a beautiful shine and a wonderful sweet contrast to the spicy Cajun flavors.

Notes
